I use super fine salt like popcorn salt on them and roast them at like 275-300. rinse them off but leave some pumpkin slime on them...gives them flavor:p I just stir them every 10-15 minutes or so til they are crunchy all the way through but not browned.

Lil, just after we spoke about it, I roasted some seeds. I think I ate the whole damn batch by myself. So far, we're up to 8 pumpkins and I can't wait to roast some more. With luck and willpower...of which I have neither, ha ha...I'll have enough for quite a while.

I'd rather the seeds than the pie:p

I tried a little something different this year.First,I scoope out the seeds into a colander to rinse and pick out the strands of pumpkin meat. Then,I placed them on a cookie sheet and left them outside for a couple of hours to semi dry.Afterward I placed them all in a bowl and used just enough oil to coat them then sprinkled liberally with salt.I use either kosher or sea salt for everything.Last,I pan roasted in batches to complete drying them and last, a little more salt. They turned out very dry and very yummy.
